After first getting to know each other we will take you to the local market to discover and taste Rome's fabulous seasonal produce. From here we will visit historic shops and delis to try Roman specialties and street food, explaining how locals really eat. After tasting spectacular cured meats, cheeses, pizza and supplì, we will grab a refreshing gelato at one of the best spots in Rome. During the tour not only will you taste amazing food, you will also meet the people behind the scenes as we stop to chat to vendors and shopkeepers. You will learn how to make many types of homemade pasta in a real laboratory of pasta, reviewed among the "best 10 pastificio in Rome" . We will start with handmade pasta, made with different kind of flours: like ancient grain Triticum Monococcum, Grano Saraceno (buckwheat) and wholemeal flour. We will do thin sheets dough, explanation of safe food cutting procedures, realization of three types of ravioli, tortellini, fettuccine with two typical Italian sauces. The experience includes a delicious tasting of local cheese and Italian Prosecco. We can also accomodate GLUTEN allergy guests and VEGAN guests for a very tasty fresh pasta. We will cook all pasta and the sauces made during the class, eating our different kind of pasta done, sipping good Italian wine. An express tiramisu preparation will follow as a dessert. During this experience you'll be able to immerse yourself in my family long time farm history. It will be my pleasure welcoming you with a cup of coffee before visiting our cellar and garden where we'll pick some vegetables to use for the class. Then we'll jump to the kitchen and put our hands in the dough or, using an Italian expression, "mettere le mani in pasta". I'll explain and provide the ingredients needed, their proportions, the full process and methods included all the tricks and how to use all the necessary tolls. Then we'll prepare the sauce using ingredients from our farm, in particular our organic vegetables. After making the tagliatelle and ravioli , it will be time to make the typical Italian cake 'tiramisù' following the recipe of my great grandma. We are now ready to enjoy a delicious dish of handmade tagliatelle accompanied with a nice glass of our organic wine and finally the amazing tiramisù. This experience also includes a pice of our homemade limoncello. All the food will be prepared and served with our own organic extra virgin olive oil. Together we will take a historical / cultural walk through the streets of Trastevere, a well-known and peculiar district of Rome, it embodies the typical and "Romanesque" style in its soul. We will also do some typical tastings, such as supplì (rise balls), Roman pizza and traditional local biscuits, baked in a historic bakery in the neighborhood. Between one stop and another, we will discover the history and essence of this neighborhood, with its alleys and craft shops. You will see where the first Jewish synagogue in Rome stood and you will discover another uniqueness of Rome: the Tiber Island, a strip of land along the river Tiber, which houses a small village. You will hear the stories of illustrious inhabitants of this district, such as the beautiful Fornarina, muse and lover of the painter Raphael. In this newborn experience you will create, all from scratch, your homemade 5 shapes of fresh pasta in a "Antica Osteria" founded in the late 1800s and recently converted into cooking school. You will taste your own pasta, with two different kind of italian fresh sauce, created and explained by the chef, immersed in a magical atmosphere between past and present. You will make the thin dough sheet with the rolling pin professional technique, safe food cutting procedures, realization of ravioli, agnolotti, tortellini cappelletti and fettuccine. The experience includes a delicious tasting of local cheese with fresh prosecco. Admire its beauty as I give you the full story behind the fountain and we get to the bottom of the coin-throwing tradition. The next stop will be in Piazza della Rotunda, the location of the world-famous Pantheon. Experience this most important of Rome’s pagan temples and discover its 2000 years of history. We save the best till last: Piazza Navona, which is by far the most elaborate of Rome’s squares. We will meet you in the beautiful district of Trastevere, known for its winding cobbled streets, pretty piazzas and ivy-draped palazzos. After first getting to know each other we will take you to the local market to discover and taste Rome's fabulous seasonal produce. From here we will visit historic shops and delis to try Roman specialties and street food, explaining how locals really eat. After tasting spectacular cured meats, cheeses, pizza and supplì, we will grab a refreshing gelato at one of the best spots in Rome. During the tour not only will you taste amazing food, you will also meet the people behind the scenes as we stop to chat to vendors and shopkeepers. Hi, I’m Veronica and together with my team of Chefs I will teach you the secrets of making home made pasta in my Kitchen Studio, located in one of the Historical Pasta Factories of Rome. I am an Italian Chef, cooking has always been my passion and I am looking forward to sharing it with you. We will use a selection of ingredients from local organic producers as I strongly believe in the importance of quality to make simple dishes with great taste. My professional kitchen, with all its facilities, will contribute to make this experience even more memorable. We will cook and enjoy the pasta we prepared during the family meal included in the cooking class. I have selected a range of natural complimentary wines that will accompany our “creations”. The majority of the classes are hosted by me and sometimes Chef Lorenzo or Chef Fernanda will take my place and host your class. They work with me on a regular basis and have many years of experience in the food industry. The Pasta Factory Class has been one of the first Airbnb experiences in Italy and in 2018 it has been the best experience in Rome.
